Bellwether Hard Cider and Wine Cellars

Bellwether is owned and operated by Bill and Cheryl Barton. The business was started in 1996 as the first cidery in the Finger Lakes (and one of the first modern-era cideries in the U.S.) and continues to be a small family-run company with a focus on producing fine artisanal ciders and wines using great local fruit.

All of the fruit used in our ciders is grown in the Finger Lakes region of New York. We use a wide variety of Upstate New York apples to produce a range of carefully handcrafted, premium ciders. These ciders range from extremely dry Champagne-style ciders made with antique North American varieties and traditional English and French cider apples, to several semi-dry, lightly sparkling ciders.  Our wine program has focused on Riesling, Pinot Noir, and sparkling wines.  Bellwether is a member of the Ithaca Farmer’s Market.
